The Food
Where Great Food Meets the World’s Best Volume Billfish Fishery
At Sailfish Oasis, our concept of a fishing trip of a lifetime involves more than just incredible sailfish and blue marlin numbers. It means a culinary experience that is specially crafted for you by our dedicated and experienced team.
Guatemala is known as the “Land of Eternal Spring.” The soil is fertile and the produce vibrant and fresh. We procure our produce year-round from farmers’ markets in Antigua.
Chef Carlos and the team pride themselves on high-quality food that is all prepared from scratch. Our reputation for serving the best food is something we take very seriously. We love seeing our clients' reactions to the culinary delights from our kitchen.
After fishing, while relaxing in the pool or at the bar you’ll be served an array of tasty boquitas (hors d’oeuvres) including sushi, sashimi, dorado fingers & spicy wings.
Dinner time at Sailfish Oasis is something to remember. A plated appetizer like ceviche, Caesar salad, prawn cocktail to start and then on to the entrée – you’ll love Chef Carlos’ mouthwatering dishes including Argentine bbq style beef steaks, whole grilled snapper &
Ginger & chili shrimp. Lobster & shrimp are sourced from local fishermen, and we serve imported USDA beef.
Sailfish Oasis provides the complete Guatemala experience in a way that is boutique, curated, and makes you the star of the show.
At Sailfish Oasis we are famous for our boat lunches. Cooked to order, made fresh on the water. You’ll choose from the likes of ceviche, seared tuna, grilled chicken sandwich. Fancy a cheeseburger?
We got you.
The boat coolers are loaded with sliced tropical fruit, chef-made guacamole, and more. There are plenty of cold waters, sodas, beer and a bottle of rum for a cocktail or two on the ride in.
Not to be outdone, breakfast starts your day in style. Guatemalan coffee—we brew Azotea coffee from Antigua. An award-winning coffee, everyone loves it and we sell the beans in the gift shop.
Breakfast at the lodge means tropical fruit, eggs made your way as well as crispy bacon and hash browns. You choose – Gringo style or our chefs can prepare you a typical Guatemalan breakfast with sweet fried plantains, black beans and avocado.
Cold Beer, Cocktails, and Cigars
Our bar is fully stocked with a range of standard and top-shelf liquor. Flor de Caña is our house rum. If you love cold beer we have a range of local style beer (Gallo & Modelo) as well as USA style artisan beers from a very popular local brewery (Cerveceria 14).
You’ll also find a well-appointed selection of wines on our wine list.
For our cigar aficianados, we have a humidor stocked with Nicaraguan and Honduran cigars.
A Dedicated, Professional Culinary Team
Chef Carlos has been running the Sailfish Oasis culinary operation since 2010. He’s not only a master in the kitchen, he’s also a really nice guy.
Our guests want to take him home with them! We often get requests for his recipes (we see a Sailfish Oasis cookbook in our future!) and for cooking classes.
We don’t offer cooking classes….yet—but this gives you an idea of the welcoming, inviting experience for which Sailfish Oasis is known.
Chef Carlos creates a variety of global flavors. He also brings a wonderful touch of Guatemalan cuisine to the lodge.
Carlos’ Guatemalan Black Bean soup has become the stuff of legend for many of our guests. It’s not uncommon for our repeat guests to request this the first night of their trip and maybe the second and third night, too. And of course, we’re more than happy to oblige.
Try our Pepián, Chef Carlos’ famous chicken stew.
Fresh. Healthy. Prepared for You.
Combining access to fresh, high-quality ingredients with a dedicated, experienced team, our
culinary approach involves flavor and quantity. We’ll feed you good food and lots of it. We believe that’s how it’s supposed to be done.
After all, you’ve come to Sailfish Oasis for the fishing trip of a lifetime. Eating well is a central part of the experience.
